Apricot Chia Pudding

Friday Favorites + Apricot Chia Pudding

Hello there, friends! How are you doing? I hope everything is going well. Sorry for my lack of posts lately. Honestly, I just wanted to take a little blog break and simply enjoy life outside of the internet world. I have been going on more walks and enjoying the warm weather we’ve been having here. It’s been nice to be able to enjoy my surroundings a little more but I’m glad to be back! This post may be a little longer than usual since I’m trying to make up for lost time! 😉

I am happy that I have a gym membership again! My membership was temporarily terminated but my husband and I decided to sign up for our own plan. I ended up signing up with the same gym that I have previously worked out at, which unfortunately does not offer any Les Mills classes so I guess I won’t be able to try any BodyPump classes for now. It’s ok though because I am happy to be able to finally go to spin class again! I’ve seriously been having withdrawals. I’ve been a member at this gym for over a year and have never had a fitness orientation where they give you an assessment and let you know your numbers and what you need to work on. I’m going to meet with the personal training director for my orientation today so I guess I’ll find out more. It has been many years since I had a personal trainer or any kind of fitness assessment so this should be interesting!

I was actually considering skipping my Friday Favorites this week, but I thought about it again and just didn’t think it would be right to go all week without blogging AND skip my Friday Favorites. So here it is, guys!

  • Origins Zero Oil Moisturizer

I LOVE Origins skin products! I’ve been using their products for several years and I’m quite pleased with the condition of my skin. Their Zero Oil moisturizer is something that I can’t live without, especially in this hot weather. Nothing is worse than having a shiny or greasy face. I’ve tried other moisturizers made specifically for oily skin but this product works best for me and nothing else can compare.

  • Bauble Necklaces

When it comes to accessorizing, I tend to struggle quite a bit. I can be quite clueless when it comes to fashion but thank goodness for Pinterest for having pictures of cute outfit ideas! I actually have a drawer of fashion jewelry but don’t wear them much- Don’t ask why because I don’t know either. However, lately, I’ve been into bauble necklaces. I know it’s not a new fashion statement and I’m aware that I’m kind of late in the fashion game, but it just happens to be one of my favorite things at the moment. 🙂 I like adding a bauble necklace to add a statement to a plain outfit or with a cute dress.

  • Adobe Photoshop Express

Adobe Photoshop Express is one of my new photo editing apps! I have a ton of photo apps that I barely use but this happens to be one of my favorites. I mainly use it to brighten and sharpen my images and think the quality is much better than other apps. It’s like having photoshop on the go, but of course, it doesn’t have all of the same features as the computer version.

Ok, so I decided to not only feature my Friday Favorites but I wanted to include a new recipe as well! I know this is outside of the norm to include both in one post but I’m going to do it anyway! Today’s recipe features an apricot chia pudding. My in-laws grow apricots at their house so we have an abundant supply. I’ve been blending them in my smoothies but I thought it would be great to use them in a chia pudding as well!

Apricot Chia Pudding

Yield: 1

Ingredients

a mason jar or cup with lid
1 cup unsweetened coconut milk
1/2 cup diced apricot
3 tablespoons chia seeds
1 tablespoon honey
dash of cinnamon

Instructions

  1. Pour coconut milk in a cup. Stir in the apricot, chia seeds, honey, and dash of cinnamon. Mix all of the ingredients well with a spoon. Secure the cup with a lid and store the mixed ingredients in the refrigerator overnight (approximately 6 hours). After 6 hours, you may enjoy this delicious treat!

I hope you enjoyed this week’s Friday Favorites and my new apricot chia pudding recipe! Have a wonderful weekend!
