Hi friends! Happy Monday! How was your first summer weekend? We were blessed with beautiful weather in Seattle! Although it rains a lot throughout the year, our summers are absolutely gorgeous so this is the perfect time to come visit! I was supposed to go to the Athleta summer solstice yoga event on Saturday but unfortunately, I was unable to make it. I will keep a close eye on upcoming yoga events so I can take part in them next time. I always enjoy doing yoga in a group environment and being around other yogis. Being around others helps motivate me, which is why I like going to group fitness classes!
Anyway, this is where I’ll be tomorrow. I know you are feeling really sorry for me right now.
This was taken nearly two years ago in Maui and we are going back tomorrow! We’re going back to the Hawaiian islands again to attend our friends’ wedding. Of all the islands, Maui is my favorite because it is so beautiful, laid back, and relaxing. I started packing last week but will have to finish tonight. So much for getting a head start. I’m always a last minute packer! However, I must say that I’m a pretty amazing packer since I always make sure I can fit everything in a carry-on. If it doesn’t fit, I’m not packing it or I’ll find a way to make it fit somehow. I was able to pack all my clothes in a carry-on for a two-week vacation, so in other words, I’m pretty much a pro!
I’m such a nut butter lover! Peanut, almond, and recently cashew butter has become my favorites. Check out my Greek yogurt granola bowl below that I posted on Instagram yesterday! I went all out with the drizzled peanut butter AND peanut butter chips! It was incredibly delicious and the avocado added a nice buttery touch! Do you think I went a little overboard with the PB? I certainly don’t!

These rainbow peanut butter granola bites are the perfect energizing snack, especially when you’re on the go! I’m going to pack these granola bites with me when I head to the airport tomorrow. We have to head out by 5:30 am so that leaves very little time for me to whip up some breakfast.
I love throwing a bunch of ingredients in a bowl.
And mixing them all together. I know my mixing bowl is a bit on the messy side but it’s all about the finished results that matter most! 🙂
Rainbow Peanut Butter Granola Bites
1 cup old-fashioned oats
1/2 cup smooth peanut butter
1/4 cup honey
1/4 cup mini peanut butter chips
1 tablespoon chia seeds
1/2 teaspoon cinnamon
1/4 cup rainbow sprinkles
- Place all ingredients in a bowl and stir until thoroughly mixed. Cover and let the mixture cool in the refrigerator for 30 minutes.
- After 30 minutes, remove bowl from the refrigerator. Wet hands and roll mixture into 1-inch diameter balls. This recipe will make approximately 15 balls. Enjoy immediately or store in a refrigerated air-tight container.
I hope you enjoy these granola bites as much as I do! Since I will be on vacation all week, I won’t be as active on my blog. As fellow bloggers know, maintaining a blog is work and it does take time and working on it while I’m on my trip will defeat the whole point of having a vacation. I have another post that is scheduled to be published while I’m away so it won’t feel like I’m being completely absent from here.
