Yes, you can enjoy a veggie pizza and quesadilla combined into one wholesome bite!
I have a confession to make. As much as I talk about being active and living a healthy lifestyle, there are times when I really dislike working out. I don’t exactly strongly dislike it but the hard part is just getting off the couch. Then comes the long list of excuses. I don’t have time. I’m tired. I’ll workout tomorrow. Then tomorrow turns into next week or next month. Has that ever happened to you before? I’ve gone through phases where I was pretty much just donating funds to the gym and not going at all. Why? I was tired.
Nowadays I feel more motivated to workout but I do have days when I just don’t want to get up. When I’m feeling sluggish I just throw my workout clothes on, fill up my water bottle, and walk out the door. My gym is only a five minute walk from me and I also have a small gym in my apartment building. Oh, there’s also this thing called the internet where I can watch free workout videos and exercise in the comfort of my own home. 😉 I also live in a very walkable neighborhood. The hardest thing is getting up but once I’m in the midst of working out, I’m addicted! I also love how I feel afterwards. It’s true when they say that you can never regret a workout! Of course, I do believe in rest days and listening to my body if I just don’t have the energy to exercise. It’s important to let your body rest and you can always continue your workout journey the next day.
Ok, let’s turn our attention to the veggie pizza quesadilla! I pretty much created this recipe with leftover ingredients that I wanted to use up before they go bad. You can use a griddle or saucepan to cook the quesadillas. I don’t have a griddle but a saucepan worked perfectly fine for me!
Veggie Pizza Quesadilla
olive oil spray
1/2 cup diced eggplant
1/2 cup sliced mushrooms
1/4 cup diced onion
1/3 cup chopped spinach
1/4 teaspoon garlic powder
salt and pepper to taste
2 whole wheat tortillas
4 tablespoons organic pizza sauce (or tomato puree)
3 tablespoons shredded parmesan cheese (more if desired)
- Heat saucepan over medium heat. Coat surface with olive oil spray. Add eggplant, mushrooms, onion, and spinach. Mix ingredients with garlic and stir for 1-2 minutes. Add salt and pepper to taste. Remove from heat when veggies are cooked.
- Spread 2 tablespoons of organic pizza sauce onto each tortilla. Evenly divide cooked veggies and place on pizza sauce. Finish off by sprinkling 1 1/2 tablespoons of parmesan cheese on each tortilla. Fold both stuffed tortillas in half.
- Heat another saucepan over medium heat (or use a griddle). Spray the surface with olive oil spray. Place both folded tortillas in the saucepan and cook for 1-2 minutes. Flip over and cook the other side for another 1-2 minutes. Remove from heat.
- Use a pizza cutter to divide each folded tortilla in half. Serve immediately and enjoy!
