Hi there, friends! How is your week going so far? My week has been off to a good start. I have been
pushing myself to stay active even though it’s much easier to lounge around in the nice weather! I started my morning by going to spin class. I just love the energy of spin class and the upbeat music also helps boost my energy as well. I recently purchased a Groupon deal for Barre3. I’ve watched barre videos on YouTube and have done the workouts at home but have never gone to an actual studio since they are quite expensive. I’m actually pretty nervous to go to my first class. I remember how nervous I was to go to my first hot yoga class. I wasn’t sure how I was able to survive the heat but I was able to push through. I hope I’m able to survive my first barre class. I think I’ll be fine but it’s ok to feel nervous when you’re trying something new, right?
Speaking of being nervous about trying new things, I also purchased an acupuncture deal from Groupon. (I really need to unsubscribe to their emails because it’s so easy to spend a lot of money on Groupon! lol.) My doctor actually recommended that I try acupuncture since I’ve tried physical therapy and it didn’t help alleviate my back pain. If you don’t know what acupuncture is, it’s basically having very thin solid needles placed into specific points of your body to treat various conditions that you may suffer from. Acupuncture is one of the key components of traditional Chinese medicine and was introduced to the states in the 1970′s. The thought of being poked with needles is not the most comforting feeling in the world. However, I was told by people that have tried it that it isn’t as painful as it looks. I haven’t made my appointment yet but I’ll let you know how it goes. Wish me luck!
Anyway, let’s move onto today’s featured recipe: coconut cashew butter. I have actually never tried cashew butter before so it was fun to try and make it on my own. Follow this recipe so that you can have your own batch at home!
Coconut Cashew Butter
1 1/2 cup roasted cashews
2 tablespoons coconut oil
1 teaspoon pure vanilla extract
1/4 teaspoon cinnamon
- Pour cashews into the food processor. Process for approximately 30 seconds, or until you reach a powdery texture.
- Add coconut oil, pure vanilla extract, and cinnamon. Blend until you reach your desired consistency. I blended the ingredients for about 3 minutes.
- Store in an air tight container and place in room temperature. Do NOT refrigerate or the butter will solidify.
