Hi, everyone! Is it Thursday already?! Where has this week gone? I am loving the weather we’ve been having in Seattle all week but unfortunately, I think we have rain in the forecast for Memorial Day weekend. How lame! I am hoping the forecast will change between now and then. Isn’t Memorial Day supposed to be the unofficial start of summertime?

Anyway, with that said, I guess it’s appropriate to say that grilling season is here! I don’t know about you, but I love grilled meat and veggies. There’s something about that nice smokey flavor that I just can’t get enough of. I was in the mood for burgers yesterday and realized that I had some cilantro to use up since they would probably go bad soon. That’s when a light bulb lit up in my head and I decided to use them in my new recipe for a cilantro turkey burger!

I know bun-less burgers are popular in the food blogging world, but I just can’t pass up on a nice toasted bun! If you want to make your burger paleo and gluten free, you can always pass on the buns and use extra lettuce to make a wrap. Below is a recipe for just the turkey patty. You can build your burger however you’d like.

Cilantro Turkey Burger

Ingredients

1 1/4 pounds lean ground turkey
1/2 cup finely chopped cilantro
1/2 cup finely chopped red onion
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon rosemary
2 tablespoons extra virgin olive oil
salt and pepper to taste

Instructions

  1. Combine all ingredients in a large mixing bowl. Mix ingredients together well and form 4-5 patties.
  2. Heat grill or skillet on medium high heat and lightly spray with oil.
  3. Add the patties to grill, cooking it for 4 minutes. Then flip the patty and cook for another 4 minutes.
  4. Serve immediately and enjoy!

I did not include this in the recipe but I wanted to share with you how I prepared my mushrooms! They added a nice tangy touch to my burgers. All you have to do is mix a 1/2 cup of balsamic vinegar, 1 tablespoon honey, and 1/4 teaspoon rosemary. Pour the mixture into a pyrex dish and add 1 cup of sliced mushrooms. Make sure the mushrooms are coated with the balsamic vinegar mix. Bake for 15 minutes at 350 degrees and you’re done!
