Remember the days when there were no televisions, cell phones, tablets, or computers? Me neither. Sometimes technology can be very draining. The fact that the number of electronic gadgets that my husband and I own extremely outnumbers us just shows that we are totally living in a different generation than we did growing up. However, I find it very difficult to disconnect from everything when this is the lifestyle I have adapted to.

As a blogger, I am on several social media platforms and spend hours editing photographs, writing posts, and doing all of the behind the scenes stuff that bloggers do to maintain a website. Outside of blogging, part of my job also involves social media. Everything just seems a bit much when my phone is constantly going off with emails and different notifications. I read that another blogger usually has her phone on silent and checks it periodically throughout the day. That way she won’t be so distracted with her phone going off every two seconds. I think that is actually a pretty good idea! If you have any tips on how to balance your life with technology or how to unplug from technology, please let me know!

Now let’s move onto my featured presentation: a caramelized mango and strawberry coconut parfait! Sorry, I know that was a mouthful but sometimes I have a hard time shortening the title of my posts without missing an important aspect. I guess I should also mention that this is vegan and gluten free!

This recipe asks for cultured coconut milk but you can also substitute with Greek yogurt.

Caramelized Mango and Strawberry Coconut Parfait

Yield: 2


1 tablespoon coconut oil
1 small ripe mango, skin removed and diced
1 tablespoon brown sugar
1/2 cup diced strawberries
6 ounces vanilla cultured coconut milk


  1. Melt coconut oil over medium heat in a saucepan. Add diced mango and brown sugar. Stir occasionally for 10 minutes and remove from heat.
  2. Layer 1/3 of the caramelized mango and 1/3 of the strawberries into a cup. Add a layer of vanilla cultured coconut milk. Continue alternating layers until remaining ingredients are used up. Serve and enjoy!
