Roasted Garlic Hummus

Hi guys! Remember me?? I know it’s been quite a while since I’ve updated my blog. I just needed the time to settle in and adjust to some changes but I am happy to be back! I really missed being creative in the kitchen and whipping up new recipes to share with you but I’m working on getting back on track!

I wish I had a story to tell about what I’ve been doing while I’ve been away from TFP but to make a long story short, I’ve just been enjoying life. Now that my job search is over and I’m settling into my new gig, I’m trying to get back into the groove of things. Recipe creating is not easy and I can’t make any promises that I’ll be able to crank new recipes out like it’s no big deal, but I will try to write blog posts about life and what I’ve been up to just to show a glimpse of my life and let you know what I’ve been up to.

Anyway, let’s talk about FOOD! I am obsessed with hummus! I can probably eat a whole small bowl by myself in one sitting. It is just so addicting! I like buying store bought hummus but why not make my own at home? It’s so easy to make and best of all, when I make it myself I know all of the ingredients that I am putting into my body. I like eating it as a dip but it also goes well as a spread in a wrap. Give my roasted garlic hummus recipe a try! You will love the flavor but please but don’t be upset with me if you happen to have strong garlic breath afterwards! ;)

Roasted Garlic Hummus

Ingredients

  • one 15 ounce can of chickpeas
  • 1 peeled and chopped carrot
  • 2 tablespoons extra virgin olive oil
  • juice of 1/2 lemon
  • 5 roasted garlic cloves
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Combine all ingredients in a food processor.
  2. Blend all ingredients together until you reach your desired consistency. You may drizzle more olive oil for added flavor. Serve immediately or store in a refrigerated air tight container.
